STRATEGIES TO ACHIEVE ZERO FOOD WASTE IN PESANTREN KITCHENS TO IMPROVE FOOD SECURITY (ANALYSIS OF HIFDZU-L-BI'AH IN MAQASHID SHARIA)
Abstract
Global research revealed that 31% of food purchased ends up as waste. Losses due
to food waste in Indonesia reached 4,701 trillion. Indonesia as a country with the largest
Muslim population in the world should have a low food waste rate, but in reality it ranks
second highest in the world with 300 kg of food wasted per capita per year totaling 13
million tons annually. If distributed, this amount could reduce poverty among Indonesians
and improve food security. In addition, the loss in environmental aspects is also very
dangerous, as piles of food waste can cause environmental pollution in the form of
water, air and soil, thus having a wide impact on the health and safety of living things.
In addition to having the largest Muslim population, Indonesia is also the country with
the largest number of pesantren with a total of 31,385 pesantren. Sadly, food waste is
still a problem in pesantren. Meanwhile, in maqashid sharia, hifdz bi'ah (protecting the
environment) is important because the position of hifdz bi'ah is as a wasilah and support for
the implementation of kulliyat al-khams. So the purpose of this research is to determine the
right strategy to achieve zero food waste in the pesantren kitchen as an effort to improve
food security by looking at its relationship with the hifdz bi'ah aspect of maqashid sharia.
This research is a type of maxing method research, namely qualitative and quantitative
with a phenomological approach with primary and secondary data sources, then observation
data is collected using data collection methods, observation, documentation, and indepth
interviews. After the data is collected, it is analyzed using deductive techniques and
Analytical Network Process (ANP) which is processed with Super Decisions version 2.1.0
software, with stages; 1). Creating a model framework, 2). Quantification of the model, 3).
Analysis of results.
The results of this study show that the most prioritized problem in food waste in the
kitchen according to the agreement of the respondents is the absence of strong internal
regulations related to food waste originating from educational institutions. The most
prioritized solution in overcoming the problem of food waste in the kitchen according to
the agreement of the respondents is to make internal regulations of educational institutions
that are strongly related to the issue of food waste. Meanwhile, the most prioritized strategy
to achieve zero food waste in the kitchen is to create and strengthen the internal regulations
of educational institutions specifically regarding food waste. In the aspect of maqashid
sharia, the resulting strategy is in accordance with the concept of hifdz biah which all aims
to protect the environment from the dangerous effects of food waste.
The recommendations in this study are for pesantren, it is important as soon as
possible to pay attention to strong and clear regulations to prevent food waste so that it
can contribute to improving food security. Steak holders should pay more attention to the
regulations related to food waste prevention in pesantren kitchens. Future research should
explore the implications of this research model in pesantren.
