Abstract
Product development plays an important role for MSMEs in Indonesia to support business growth and the economy. UD. Matrix Jaya is an MSME located in Jember Regency, East Java, engaged in food processing. However, limited knowledge has resulted in a lack of product testing before commercialization. This study aims to improve the product quality of UD. Matrix Jaya by applying the House of Quality (HOQ) and Failure Mode and Effect Analysis (FMEA) methods. Data were collected through interviews and questionnaires to identify 17 product attributes desired by consumers, which were then translated into 18 technical responses in the House of Quality (HOQ). The results showed that the most important attributes were "Clean jackfruit seed chocolate candies" and "Free from foreign objects," with a satisfaction score of 4.75. The main technical responses included "High-quality raw materials," "Safe for consumption," and "Safe additional ingredients," each contributing a value of 86. The FMEA analysis identified potential failures in the production process, particularly in the mixing of melted chocolate and jackfruit seeds as well as the packaging process, with a Risk Priority Number (RPN) of 126. This study provides insights for MSMEs in understanding consumer needs and reducing production risks, thereby helping to continuously improve product quality.
