FORMULATION OF SOLID SOAP YOGHURT WHEY WITH NATURAL COLOR FROM BUTTERFLY PEA FLOWER (CLITORIA TERNATEA L.)
Abstract
The soaps available in the market mostly contain chemicals that can potentially
cause irritation making it easily exposed to bacteria. The use of natural antibacterial
ingredients that can be utilized in soap formulation is whey. Whey contains
lactoferrin as a natural inhibitor of microbial growth. The additional ingredients
used in the production of soap is butterfly pea flower, which containing antioxidants
and anthocyanins, anthocyanins can be used as natural dyes. This research aims to
determine the effect of different concentrations of whey on the evaluation of the
physical quality of yoghurt whey solid soap with natural dye of Butterfly pea flower
(Clitoria ternatea L.). yogurt, whey: milk is 100, 75, 50, 25. Data analysis compared
with the evaluation of physical quality 3532 SNI 2016. The results of the research
on the characteristics of yoghurt whey solid soap preparations with natural dye from
Butterfly pea flower (Clitoria ternatea L.) show cream in color, solid oval shape and
distinctive aroma. pH evaluation 9-11; foam stability 12-15%; moisture content 7-
9%; total fat 9-19%; ethanol insoluble ingredients 0.004-0.017%; free alkali 0.02-
0.05%; free fatty acids 0.57-0.66%; chloride content 0.035-0.045%. The best
formulation was formula 1 100% whey pH 9; moisture content 9.31%; ethanol
insoluble material 0.004%; free alkali 0.03%; free fatty acid 0.46%; chloride
content 0.035%. Evaluation test of fiscal quality properties of total fat 9-19% is not
in accordance with the Indonesian National Standard (SNI).
